Ingredients

Scale
  • 1 ½ pounds (680g) ground turkey, 93% lean
  • ½ medium yellow onion, grated
  • 3 cloves garlic, minced
  • ½ cup (60g) panko breadcrumbs
  • 1 large egg
  • ¼ cup (25g) grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons (30ml) olive oil
  • 3 cups (450g) cooked quinoa or brown rice
  • 3 cups total roasted vegetables (broccoli, bell peppers, or other)
  • 3 cups (90g) fresh spinach or arugula
  • ¾ cup (180g) plain Greek yogurt
  • 2 tablespoons (30ml) lemon juice
  • 2 tablespoons fresh dill, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Grate half a yellow onion using the large holes of a box grater or microplane. Do not drain the juice.
  3. In a large mixing bowl, combine ground turkey, grated onion (with juice), minced garlic, panko breadcrumbs, egg, Parmesan, oregano, basil, salt, and pepper. Mix gently with your hands until just combined.
  4. Using a 1 ½-tablespoon cookie scoop or your hands, form the mixture into evenly sized meatballs (about 20 to 22). Place on prepared baking sheet, spacing about 1 inch apart. Drizzle with olive oil and gently roll to coat.
  5. Bake for 18 to 22 minutes, until golden brown and cooked through (internal temperature of 165°F / 74°C). Let rest on baking sheet for 5 minutes.
  6. While meatballs roast, cook quinoa or brown rice according to package directions.
  7. Toss chopped vegetables with olive oil, salt, and pepper. Spread on a separate baking sheet and roast for 15 to 20 minutes, until tender and slightly charred.
  8. In a small bowl, whisk together Greek yogurt, lemon juice, fresh dill, salt, and garlic powder. Adjust seasoning to taste.
  9. To assemble bowls, divide cooked quinoa or rice among meal prep containers. Top with fresh spinach or arugula, roasted vegetables, and 4 to 5 meatballs. Drizzle with yogurt sauce or pack separately.

Notes

Don’t skip grating the onion—it keeps the meatballs moist. Use a light hand when mixing to avoid dense meatballs. Let meatballs rest after roasting to prevent falling apart. For meal prep, store yogurt sauce separately and add fresh greens after reheating. Flavors improve on day two.
