  • 12 fresh medium-sized jalapeños, washed and halved lengthwise
  • 8 ounces (226 g) cream cheese, softened to room temperature
  • 1 cup (113 g) shredded cheddar cheese, sharp or mild
  • 12 slices thick-cut bacon, partially cooked (about 50% done)
  • 1/4 cup (50 g) packed dark brown sugar
  • 2 tablespoons (30 ml) bourbon (e.g., Maker’s Mark or Buffalo Trace)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Cut 12 fresh jalapeños in half lengthwise and carefully scoop out seeds and membranes.
  2. In a medium mixing bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Fill each jalapeño half generously with the cheese mixture using a spoon or melon baller.
  4. Partially cook bacon slices in a skillet or microwave until about 50% done and cool slightly.
  5. Wrap each stuffed jalapeño half with one slice of partially cooked bacon.
  6. Mix brown sugar and bourbon in a small bowl. Brush or spoon the mixture evenly over the bacon-wrapped poppers.
  7. Place poppers on a wire rack over a rimmed baking sheet or directly on the sheet if no rack is available.
  8. Bake in a preheated oven at 400°F (204°C) for 20-25 minutes, turning halfway through for even crisping. Watch closely after 20 minutes to avoid burning.
  9. Let poppers rest for 5 minutes after baking before serving warm.
