A quick and easy appetizer featuring warm, sweet caramelized peaches paired with creamy burrata and crunchy toasted bread, perfect for entertaining or a fancy snack.

Ingredients

Scale
  • 3 medium ripe peaches, sliced
  • 1 ball (8 oz or 225 g) burrata cheese
  • 1 small baguette, sliced into 1/4-inch (6 mm) thick pieces
  • 2 tablespoons (28 g) unsalted butter
  • 1 tablespoon (15 ml) brown sugar or honey
  • 1 teaspoon fresh thyme leaves (optional)
  • Balsamic glaze, for drizzling
  • Pinch of sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice the baguette into 1/4-inch (6 mm) thick pieces. Arrange slices on a baking sheet and brush lightly with melted butter. Toast in the oven for 8–10 minutes or until golden and crisp, flipping halfway.
  2. Melt 2 tablespoons unsalted butter in a skillet over medium heat. Add sliced peaches in a single layer and sprinkle with 1 tablespoon brown sugar or honey. Cook undisturbed for about 3 minutes until golden and caramelized on the bottom.
  3. Flip peaches carefully and cook for another 2 minutes until tender but still holding shape. Stir in fresh thyme leaves, salt, and a pinch of black pepper. Remove from heat and set aside.
  4. Spread a generous spoonful of burrata on each toasted bread slice. Top with one or two caramelized peach slices.
  5. Drizzle balsamic glaze over the crostini and sprinkle with additional fresh thyme or cracked black pepper if desired. Serve immediately.

Notes

If peaches release too much liquid while cooking, increase heat slightly to evaporate moisture faster. Do not crowd the pan to ensure proper caramelization. Assemble crostini just before serving to keep bread crunchy. Substitute nectarines or apricots if peaches are out of season. For dairy-free, use vegan cheese alternatives. Gluten-free bread can be used for gluten-free diets.
