  • 2 tablespoons (30 ml) canola or vegetable oil
  • 3 tablespoons (45 g) unsalted butter, melted
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon fine sea salt
  • ½ cup (90 g) white chocolate chips (Ghirardelli or Guittard recommended)
  • 1 teaspoon honey or light corn syrup (optional)

Instructions

  1. Heat 2 tablespoons (30 ml) of oil in a large heavy-bottomed pot over medium-high heat. Add ½ cup (100 g) popcorn kernels and cover with the lid slightly ajar to allow steam to escape. Shake the pot occasionally to prevent burning. Popcorn should start popping within 3-4 minutes and finish by 6-7 minutes. Remove from heat when popping slows to 2-3 seconds between pops. Transfer popcorn to a large bowl.
  2. In a microwave-safe bowl, melt 3 tablespoons (45 g) unsalted butter until fully liquid (about 30 seconds). Pour over popcorn and toss gently but thoroughly with a wooden spoon or spatula to coat evenly.
  3. In a small bowl, combine 1 teaspoon chili powder, 1 teaspoon smoked paprika, ½ teaspoon garlic powder, and 1 teaspoon fine sea salt. Sprinkle over buttered popcorn and toss again to distribute the seasoning well.
  4. Place ½ cup (90 g) white chocolate chips in a microwave-safe bowl. Microwave in 20-second bursts, stirring between each, until smooth and creamy. Add 1 teaspoon honey or light corn syrup if desired for a shinier drizzle.
  5. Using a spoon or fork, drizzle the melted white chocolate over the popcorn on a parchment-lined baking sheet. Spread popcorn gently to keep the drizzle even. Allow to set at room temperature for about 15 minutes or place in the fridge for 5-7 minutes.
  6. Once the drizzle is firm, break any large clusters apart and serve immediately. Store leftovers in an airtight container to keep crisp.

Notes

Use fresh popcorn kernels for best popping results. Shake the pot frequently to avoid burning. Let popcorn cool slightly before drizzling white chocolate to prevent melting. Store in airtight container at room temperature for up to 3 days. Avoid refrigeration to maintain crispness. For vegan version, use dairy-free butter and vegan white chocolate chips.
