Grilled watermelon steaks with a smoky char and a sweet-tart honey lime glaze create a refreshing and surprising summer dish that’s quick and easy to prepare.

Ingredients

  • Seedless, firm, ripe watermelon (cut into 1-inch thick steaks, about 3 to 4 inches wide)
  • 3 tablespoons honey (raw or wildflower, local preferred)
  • Juice and zest of 1 fresh lime
  • 1 teaspoon olive oil (extra virgin)
  • Pinch of ground cumin
  • Pinch of sea salt or kosher salt
  • Freshly cracked black pepper to taste
  • Optional garnish: fresh mint or cilantro leaves

Instructions

  1. Rinse the watermelon and pat dry. Cut into 1-inch thick steaks, about 3 to 4 inches wide. Remove any seeds if desired.
  2. In a small mixing bowl, whisk together honey, lime juice and zest, olive oil, ground cumin, salt, and black pepper to make the honey lime glaze. Set aside.
  3. Preheat grill to medium-high heat (about 400°F). Clean and oil the grates to prevent sticking.
  4. Lightly brush both sides of each watermelon steak with olive oil.
  5. Place watermelon steaks on the grill and cook for 3 to 4 minutes per side until grill marks appear and edges caramelize, but steaks still hold shape.
  6. During the last minute of grilling each side, brush the honey lime glaze generously onto the steaks, watching carefully to avoid burning.
  7. Remove steaks from grill and let rest for 2 to 3 minutes to allow flavors to settle and glaze to thicken slightly.
  8. Garnish with fresh mint or cilantro and add a final squeeze of lime juice before serving.

Notes

Use firm, ripe watermelon that is heavy for its size to prevent falling apart on the grill. Brush glaze on at the end of grilling to avoid burning the sugars. Let steaks rest after grilling to allow glaze to set. For vegan glaze, substitute honey with agave nectar or maple syrup. Optional: add smoked paprika or chili flakes to glaze for a spicy kick.
