Flavorful Roasted Nectarine Burrata Toast with Honey

A quick and easy toast recipe featuring juicy roasted nectarines, creamy burrata cheese, and a sweet honey drizzle, perfect for breakfast, brunch, or a light snack.

  • 2 medium ripe nectarines, halved and pitted
  • 8 ounces (about 225g) burrata cheese, fresh and creamy
  • 4 slices rustic sourdough or ciabatta bread, thick-cut
  • 2 tablespoons honey (wildflower or orange blossom preferred)
  • 1 tablespoon extra virgin olive oil
  • A few sprigs fresh thyme (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, a pinch

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Halve the nectarines and remove pits. Place them cut side up on the baking sheet. Drizzle with 1 tablespoon olive oil, sprinkle lightly with sea salt, and scatter fresh thyme leaves over the top if using. Toss gently to coat.
  3. Roast nectarines in the oven for 15-18 minutes until golden and tender with slightly caramelized edges.
  4. While nectarines roast, toast the bread slices until golden and crisp.
  5. Spread a generous amount of burrata on each toasted bread slice. Let burrata sit for 5 minutes if too cold to soften slightly.
  6. Place two halves of roasted nectarine on each toast, cut side up. Spoon any juices from the baking sheet over the top.
  7. Drizzle about 1/2 tablespoon of honey over each toast, allowing the warmth from the fruit to melt the honey into a glaze.
  8. Sprinkle a pinch of sea salt and freshly ground black pepper on top.
  9. Serve immediately while nectarines are warm and burrata is fresh.

Notes

Rotate the pan halfway through roasting if nectarines aren’t cooking evenly. Brush bread lightly with olive oil before toasting for extra crunch. Let burrata soften slightly before spreading to maintain creaminess. Serve immediately for best texture and flavor. Store nectarines and burrata separately in airtight containers for up to 2 days. Avoid microwaving toast to prevent sogginess.
