A quick and easy summer salsa combining the sweet juiciness of ripe peaches with the sharp kick of jalapeños, balanced with lime juice and honey for a fresh, bold flavor.

  • 2 cups fresh peaches, peeled and diced (about 300g)
  • 1 to 2 tablespoons jalapeño peppers, seeded and finely chopped (15-30g)
  • 1/4 cup red onion, finely diced (40g)
  • 2 tablespoons fresh cilantro, chopped (8g)
  • 2 tablespoons fresh lime juice (30 ml)
  • 1 teaspoon honey (7g)
  • 1/2 teaspoon salt (3g)
  • 1 small clove garlic, minced (optional)

Instructions

  1. Prepare the peaches by peeling them. Score an ‘X’ at the bottom and blanch in boiling water for 30 seconds to easily remove the skin. Dice peaches into 1/2-inch cubes and set aside about 2 cups (300g).
  2. Slice jalapeños in half, remove seeds if less heat is desired, and finely chop 1 to 2 tablespoons (15-30g). Wash hands thoroughly after handling.
  3. Finely dice 1/4 cup (40g) of red onion. If desired, soak diced onion in cold water for 10 minutes and drain to reduce sharpness.
  4. Roughly chop 2 tablespoons (8g) of fresh cilantro leaves.
  5. In a medium mixing bowl, gently combine diced peaches, chopped jalapeños, red onion, and cilantro.
  6. Add 2 tablespoons (30 ml) of fresh lime juice and 1 teaspoon (7g) of honey to the bowl. Stir gently to combine.
  7. Season with 1/2 teaspoon (3g) salt or to taste.
  8. If using, add 1 small clove minced garlic for extra flavor.
  9. Cover and refrigerate the salsa for at least 15 minutes to let flavors meld. Serve chilled or at room temperature.

Notes

Use ripe but firm peaches for best texture. Adjust jalapeño seeds to control heat. Let salsa rest for at least 15 minutes before serving to meld flavors. For a smoother texture, pulse gently in a food processor. Salsa can be refrigerated up to 3 days or frozen for longer storage, though freezing may soften peaches.
