A refreshing and textured salad combining crunchy cucumber, ripe tomatoes, and creamy avocado, all tossed in a zesty lime-cilantro dressing. Perfect for summer gatherings or a light side dish.

  • 1 large cucumber, peeled and diced
  • 2 cups ripe tomatoes, chopped
  • 1 ripe avocado, diced
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey or agave syrup
  • 1 small garlic clove, minced (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Peel and dice the cucumber into bite-sized cubes. Chop the tomatoes similarly, removing any excess seeds if desired. Dice the ripe avocado carefully, keeping pieces uniform.
  2. In a small bowl or jar, combine lime juice, chopped cilantro, olive oil, honey, and minced garlic. Add salt and pepper. Whisk or shake vigorously until emulsified.
  3. Place cucumber and tomatoes in a medium bowl. Pour dressing over and toss lightly to coat.
  4. Add diced avocado last and fold in gently to avoid breaking the pieces.
  5. Taste and adjust salt, pepper, or lime juice as needed.
  6. Optional: Let salad rest 5 to 10 minutes at room temperature to meld flavors.

Notes

Use Haas avocados for best texture. To prevent avocado browning, toss diced avocado with a splash of lime juice before adding to salad. Add dressing just before serving for maximum freshness. Can substitute parsley for cilantro. For vegan version, replace honey with agave or maple syrup.
