A refreshing and easy summer salad combining crisp cucumbers, juicy tomatoes, tangy feta, and fresh dill with a light lemon-olive oil dressing. Perfect as a healthy side dish for warm weather meals.

  • 2 medium cucumbers, peeled and sliced thin
  • 3 medium ripe tomatoes, chopped
  • 4 ounces (115 grams) crumbled feta cheese
  • 2 tablespoons fresh dill, finely chopped
  • 1/2 small red onion, thinly sliced (optional)
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 small clove garlic, minced (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of crushed red pepper flakes (optional)

Instructions

  1. Peel cucumbers if the skin feels waxy, then slice into thin rounds about 1/8-inch thick.
  2. Chop tomatoes into bite-sized pieces roughly 1-inch chunks.
  3. Thinly slice red onion into half-moons if using.
  4. Transfer cucumbers, tomatoes, and onion to a mixing bowl.
  5. Rinse, pat dry, and finely chop fresh dill; add to the bowl.
  6. In a small bowl or jar, whisk together olive oil, lemon juice, and minced garlic if using.
  7. Season dressing lightly with salt and black pepper, remembering feta adds saltiness.
  8. Pour dressing over vegetables and dill; gently toss to coat evenly.
  9. Sprinkle crumbled feta cheese over the top and toss gently or leave as garnish.
  10. Serve immediately or chill in the refrigerator for 10-15 minutes to meld flavors.

Notes

Add salt sparingly due to feta’s saltiness. Use English cucumbers for fewer seeds and tender skin. Toss dressing just before serving to keep flavors fresh. Optional ingredients like red onion, garlic, and crushed red pepper flakes add extra flavor. For vegan version, substitute feta with firm tofu or vegan cheese. Drain excess tomato juice if too watery.
