Instructions

  1. Cube about 4 cups of watermelon into bite-sized pieces, keeping them uniform for ease of eating and appearance.
  2. Crumble 1 cup of good-quality feta cheese.
  3. Rinse and dry about 1/4 cup of fresh mint leaves, then roughly chop or tear them.
  4. In a large mixing bowl, gently combine the watermelon cubes, crumbled feta, and mint without breaking the watermelon pieces.
  5. Drizzle 2 tablespoons of balsamic glaze evenly over the salad. If desired, add 1 tablespoon of extra virgin olive oil and toss gently to coat.
  6. Season with freshly ground black pepper and a light sprinkle of sea salt if needed, tasting first to avoid over-salting.
  7. Serve immediately for best freshness. If storing, keep covered in the refrigerator for up to 4 hours and drain any released juice before serving.
