These fun homemade dinosaur egg deviled eggs are a playful twist on classic deviled eggs, featuring cracked shells that create a prehistoric fossil look. Perfect for kids’ lunchboxes, they are quick, easy, and delicious with a creamy, tangy filling.

  • 1/4 cup (60 ml) mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • Food coloring (optional)

Instructions

  1. Crack the eggshells gently by tapping each egg with the back of a spoon or on the countertop to create small cracks without peeling off the shell. (5 minutes)
  2. Place the cracked eggs in a medium saucepan and cover with cold water by about an inch. Bring to a boil over medium-high heat. Once boiling, turn off the heat, cover the pot, and let the eggs sit for 12 minutes.
  3. Drain the hot water and immediately transfer the eggs to a bowl of ice water. Let chill for 5 minutes to stop cooking and make peeling easier. Peel the eggs to reveal the marbled cracked shell effect. (5-7 minutes)
  4. Slice each egg in half lengthwise. Scoop out the yolks into a small mixing bowl. Mash yolks with a fork and add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper. Mix until smooth and creamy. Adjust seasoning to taste. (5 minutes)
  5. Spoon or pipe the yolk mixture back into the egg whites. Sprinkle smoked paprika on top for a smoky finish and prehistoric dust effect. Keep refrigerated until ready to serve or pack. (5 minutes)

Notes

Use older eggs for easier peeling. Crack shells gently to avoid leaking whites. For extra smooth filling, add a splash of milk or cream. Store in airtight container in fridge up to 2 days. Optional food coloring can be added to boiling water for tinted cracked shells. May substitute mayonnaise with Greek yogurt, vegan mayo, mashed avocado, or hummus for dietary preferences.
