Healthy Chocolate Chip Pumpkin Protein Muffins

Moist and flavorful pumpkin protein muffins with chocolate chips, perfect for meal prep and packed with wholesome ingredients to keep you fueled.

  • 1 ½ cups canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • ⅓ cup plain Greek yogurt (or dairy-free coconut yogurt)
  • ½ cup brown sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour or oat flour
  • ½ cup vanilla or unflavored whey protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ cup semi-sweet chocolate chips (use dairy-free if needed)

Instructions

  1. Preheat the oven to 350°F (175°C). Line your muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, protein powder, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, whisk the pumpkin puree, eggs, Greek yogurt, brown sugar, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry and gently stir with a spatula just until combined. Stop when a few streaks of flour remain.
  5. Fold in the chocolate chips carefully to avoid breaking them up.
  6. Spoon the batter evenly into the prepared tin, filling each about ¾ full.
  7. Bake for 18-22 minutes. Start checking at 18 minutes by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  8. Remove the muffins from the oven and let them cool in the tin for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to avoid tough muffins. Toss chocolate chips in a little flour before folding in to prevent sinking. If muffins brown too quickly, tent with foil halfway through baking. Muffins keep well refrigerated for up to 5 days or frozen for up to 3 months.
