These pinwheel wraps are a quick, easy, and healthy snack or meal option packed with lean turkey, creamy hummus, and fresh veggies, perfect for weight loss and on-the-go eating.

Ingredients

  • Whole wheat or spinach tortillas (8-inch size)
  • 6 oz lean sliced turkey breast (nitrate-free deli turkey preferred)
  • ½ cup hummus (classic or roasted red pepper flavor)
  • ½ medium cucumber, thinly sliced
  • ½ red bell pepper, julienned
  • ½ cup shredded carrots
  • 1 cup baby spinach or mixed greens
  • 1 tablespoon fresh parsley or cilantro, chopped (optional)
  • Fresh lemon juice (a squeeze)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse and dry the cucumber, bell pepper, and spinach. Slice the cucumber into thin rounds, julienne the bell pepper, shred the carrots if not pre-shredded, and roughly chop the spinach or use baby leaves as is.
  2. In a small bowl, toss the chopped parsley or cilantro with a squeeze of fresh lemon juice, a pinch of salt and pepper. This mix will add a bright pop to your wraps if you choose to include it.
  3. Place your tortilla flat on a clean surface. Use a spoon or spatula to spread about 2 tablespoons of hummus evenly over the entire surface, leaving about half an inch from the edges to prevent overflow.
  4. Arrange the turkey slices evenly on top of the hummus. Then layer the cucumber, bell pepper, shredded carrots, and spinach (plus the herb-lemon mix if using). Keep the edges clear to make rolling easier.
  5. Starting at one edge, roll the tortilla tightly but gently to avoid tearing. Wrap the roll in plastic wrap and chill for 10 minutes if you have time—this helps it hold together. Then, using a serrated knife, slice the roll into 1-inch pinwheels.

Notes

If tortillas are cold, warm them wrapped in a damp paper towel for 10-15 seconds to soften and prevent cracking. Avoid overstuffing the wraps to make rolling easier. Chilling the rolled wrap before slicing helps keep pinwheels intact and neat. For moisture, add a thin drizzle of olive oil or a smear of Greek yogurt under the turkey if desired. Fresh veggies like cucumber should be added just before assembling if prepping ahead to avoid sogginess. Freezing is not recommended as fresh veggies lose texture.
