Instructions

  1. Prep the vegetables: Dice the onion and red bell pepper into small, even pieces (about 1/4-inch). Mince the garlic cloves.
  2. Brown the turkey: Heat olive oil in a large Dutch oven or pot over medium-high heat. Add ground turkey and break it apart with a wooden spoon. Cook for 5-6 minutes until no longer pink and browned bits form. Drain excess liquid if needed.
  3. Sauté the aromatics: Reduce heat to medium. Add diced onion and bell pepper to the pot. Cook for about 4 minutes until softened and onion is translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Bloom the spices: Sprinkle chili powder, cumin, and smoked paprika over the turkey and vegetables. Stir constantly for 30 seconds until aromatic.
  5. Add liquids and beans: Pour in diced tomatoes (with juices), tomato sauce, and chicken broth. Add drained kidney beans and black beans. Stir in chipotle in adobo if using. Mix well.
