  • Zest of half a lemon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and dry the peaches, then slice them in half and remove the pits. Place the halves cut side up in a baking dish, spacing them evenly.
  3. In a small bowl, combine honey, ground cinnamon, melted unsalted butter, vanilla extract, and a pinch of sea salt. Whisk until smooth and shiny.
  4. Brush or spoon the glaze generously over the peach halves, ensuring each one is well coated.
  5. Sprinkle lemon zest evenly over the peaches.
  6. Bake uncovered for 20-25 minutes, or until peaches are tender and bubbling but still hold their shape.
  7. Remove from oven and let the peaches rest for 5 minutes to allow juices to thicken slightly.
