A quick and easy toast featuring honey roasted peaches, creamy burrata, fresh basil, and a tangy balsamic glaze, perfect for summer brunch or a light snack.

  • 2 large ripe peaches, halved and pitted
  • 3 tablespoons raw or wildflower honey
  • 8 ounces (225g) burrata cheese, drained and torn into chunks
  • A small handful fresh basil leaves, torn
  • About 2 tablespoons balsamic glaze, store-bought or homemade
  • 4 slices rustic sourdough or ciabatta bread, toasted
  • 1 tablespoon extra virgin olive oil
  • Pinch of flaky sea salt
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Slice the peaches in half and remove the pits. Place them cut side up on the baking sheet.
  3. Drizzle about 2 tablespoons of honey over the peaches, letting it pool slightly in the centers.
  4. Roast the peaches for 15-20 minutes until tender and edges start to caramelize.
  5. While peaches roast, brush each slice of bread lightly with olive oil and toast until golden and crisp, about 3-4 minutes per side in a grill pan or 2-3 minutes in a toaster.
  6. If making balsamic glaze, simmer ½ cup (120ml) balsamic vinegar with 1 tablespoon sugar over medium heat until reduced by half and syrupy, about 10-15 minutes. Let cool slightly.
  7. Slice the roasted peaches into wedges and arrange on each piece of toasted bread.
  8. Scatter chunks of burrata over the peaches.
  9. Tear fresh basil leaves by hand and sprinkle over the toast.
  10. Drizzle balsamic glaze over everything, then add a pinch of flaky sea salt and freshly cracked black pepper to taste.
  11. Serve immediately while peaches are warm and burrata is soft and creamy.

Notes

Use firm but fragrant peaches for best roasting results. Brush bread with olive oil before toasting to prevent sogginess. If making balsamic glaze at home, keep heat medium-low and stir often to avoid burning. Assemble toast just before serving to keep bread crisp. Variations include swapping basil for mint or thyme, using nectarines or plums instead of peaches, adding toasted nuts, or using dairy-free cheese alternatives.
