  • 1/4 cup honey
  • 1/4 cup bourbon
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon freshly ground black pepper
  • Kosher salt, to taste
  • 1 tablespoon olive oil
  • Optional: pinch of red pepper flakes
  • Optional: fresh thyme or rosemary for garnish

Instructions

  1. Pat pork chops dry with paper towels. Season both sides generously with kosher salt, black pepper, and smoked paprika. Set aside.
  2. In a medium bowl, whisk together honey, bourbon, soy sauce, minced garlic, and optional red pepper flakes to make the glaze.
  3. Optional: Marinate pork chops in half the glaze for 15-20 minutes at room temperature or up to 1 hour in the fridge.
  4. Preheat grill to medium-high heat (about 400°F). Lightly oil the grill grates.
  5. Grill pork chops for 5-6 minutes per side, brushing frequently with reserved glaze. Cook until internal temperature reaches 145°F.
  6. Optional: Pour leftover glaze into a small saucepan and simmer gently until slightly thickened for drizzling.
  7. Remove pork chops from grill and let rest for 5 minutes covered loosely with foil.
  8. Drizzle thickened glaze over pork chops and garnish with fresh herbs if desired. Serve hot.

Notes

Brush glaze on during the last few minutes of grilling to prevent burning. Use a two-zone grill setup to control caramelization and avoid charring. Let pork chops rest after grilling to keep them juicy. For alcohol-free version, substitute bourbon with apple cider or white grape juice plus vanilla extract.
