A simple and flavorful slow cooker recipe for juicy, tender shredded chicken tacos with salsa verde, perfect for easy taco nights and busy weeknights.

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa verde (about 240 ml)
  • ½ cup chicken broth (about 120 ml)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • Juice of 1 fresh lime
  • ¼ cup chopped cilantro (optional)
  • 812 small corn or flour tortillas

Instructions

  1. Finely chop 1 medium onion and mince 3 garlic cloves. Measure out spices and have salsa verde and chicken broth ready (about 10 minutes prep).
  2. Place chicken breasts in the crockpot. Sprinkle chopped onion and garlic evenly over the chicken.
  3. Sprinkle 1 teaspoon ground cumin, 1 teaspoon chili powder, 1 teaspoon salt, and ½ teaspoon black pepper over the chicken and veggies.
  4. Pour 1 cup salsa verde and ½ cup chicken broth over the chicken, covering about half the chicken.
  5. Cover and cook on low for 4-5 hours until chicken is fork-tender. Alternatively, cook on high for 2-3 hours if short on time.
  6. Shred the chicken directly in the crockpot using two forks or tongs. Stir to mix shredded chicken with juices and salsa verde (2-3 minutes).
  7. Squeeze fresh lime juice over the chicken and stir in chopped cilantro for brightness.
  8. Warm tortillas in a dry skillet or microwave wrapped in a damp towel until soft and pliable.
  9. Assemble tacos by spooning generous portions of shredded chicken onto tortillas. Add desired toppings such as diced onions, avocado slices, or sour cream.

Notes

Do not overcook the chicken to avoid dryness; 4-5 hours on low is ideal. Shred chicken while hot in the crockpot to absorb juices better. Add fresh lime juice at the end for brightness. If chicken seems dry after shredding, add a splash of chicken broth and stir. For extra heat, add jalapeños, cayenne, or chipotle in adobo. Leftovers keep well refrigerated for up to 4 days and freeze well for up to 3 months (without tortillas).
