A quick and easy taco soup made with ground beef, black beans, corn, and a flavorful broth, ready in under 30 minutes. Perfect for busy weeknights and loved by kids and adults alike.

Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 cloves garlic, minced (or 1 teaspoon jarred minced garlic)
  • 1 packet taco seasoning (such as Old El Paso or homemade)
  • 1 can (15 oz) diced tomatoes, undrained (fire-roasted preferred)
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or 1.5 cups frozen corn)
  • 2 cups low-sodium beef broth
  • Optional toppings: shredded cheddar cheese, sour cream, crushed tortilla chips, diced avocado, fresh cilantro

Instructions

  1. Brown the beef: Place a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned (about 5-6 minutes). Drain excess fat, leaving about 1 tablespoon.
  2. Cook the aromatics: Add the diced onion to the pot and cook for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the seasoning: Sprinkle the taco seasoning over the beef and onion mixture. Stir and cook for 1 minute to bloom the spices.
  4. Pour in the liquids: Add the diced tomatoes (with their juice), tomato sauce, and beef broth. Stir to combine, scraping up any browned bits from the bottom of the pot.
  5. Add the beans and corn: Stir in the drained black beans and drained corn. The soup will be thin but will thicken as it simmers.
  6. Simmer: Bring the soup to a gentle boil, then reduce heat to medium-low. Simmer uncovered for 10-15 minutes, stirring occasionally, until flavors meld and soup thickens slightly.
  7. Taste and adjust: Taste the soup and add salt, pepper, or additional seasoning as needed. For more heat, add a dash of cayenne or hot sauce.
  8. Serve: Ladle the soup into bowls and let everyone add their desired toppings. Crushed tortilla chips are highly recommended.

Notes

The soup thickens as it sits; add a splash of broth when reheating. Leftovers taste even better the next day. For a thicker, chili-like texture, gently mash some beans with a potato masher after simmering. This soup freezes well for up to 3 months.
