This quick and easy breakfast casserole is made with simple ingredients like sausage, eggs, bread, and cheese. It’s a crowd-pleaser that comes together in under 30 minutes, perfect for busy mornings or holiday brunches.

Ingredients

Scale
  • 1 lb (450g) ground breakfast sausage
  • 8 large eggs
  • 1 cup (240ml) whole milk
  • 6 cups (about 300g) day-old white bread, cut into 1-inch cubes
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon mustard powder (optional)
  • 3 green onions, thinly sliced (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  2. Place a large skillet over medium-high heat. Add the ground breakfast sausage and cook, breaking it up with a spatula, for 6-8 minutes until browned and cooked through. Let it cool slightly.
  3. While the sausage cooks, cut the day-old bread into 1-inch cubes. If using fresh bread, toast the cubes on a baking sheet at 350°F for 5 minutes to dry them out.
  4. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and mustard powder (if using) until smooth and slightly frothy.
  5. Spread the bread cubes evenly in the prepared baking dish. Sprinkle the cooked sausage over the bread, then top with the shredded cheddar cheese. Pour the egg mixture evenly over the entire dish, pressing down gently with a spatula to help the bread absorb the liquid.
  6. Bake for 25-30 minutes, until the edges are golden brown and puffed, and the center is set (it should jiggle slightly in the middle). A knife inserted into the center should come out mostly clean.
  7. Remove from the oven and let it rest on a wire rack for at least 5 minutes. Garnish with sliced green onions and serve warm.

Notes

For best results, use day-old bread and let the casserole rest before slicing. To make ahead, assemble the night before and refrigerate; add 5-10 minutes to baking time. For a vegetarian version, swap sausage for plant-based sausage or black beans with sautéed mushrooms and bell peppers.
