These peanut butter banana overnight oats are a quick, easy, and kid-approved breakfast that comes together in under 5 minutes. With simple ingredients and a creamy, pudding-like texture, they’re perfect for busy mornings and picky eaters.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (whole, 2%, oat, or unsweetened almond)
  • 1/4 cup (60g) creamy peanut butter
  • 1 medium ripe banana (about 120g mashed)
  • 1 tablespoon (15ml) maple syrup (optional)
  • 1 tablespoon (12g) chia seeds
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, 1 tablespoon mini chocolate chips, chopped peanuts

Instructions

  1. Mash the ripe banana in a medium mixing bowl with a fork or potato masher until mostly smooth with a few small lumps.
  2. Add the milk, peanut butter, maple syrup (if using), and vanilla extract to the mashed banana. Whisk or stir until the peanut butter is fully incorporated. If the peanut butter clumps, microwave the mixture for 10 seconds to soften.
  3. Stir in the rolled oats, chia seeds, cinnamon, and a tiny pinch of salt until everything is evenly combined.
  4. Divide the mixture evenly into 4 small (8-ounce) jars or 2 pint-sized jars, leaving about half an inch of space at the top for toppings.
  5. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats well. If too thick, stir in a splash of milk. Add desired toppings (sliced banana, peanut butter drizzle, mini chocolate chips, etc.) and serve cold or at room temperature.

Notes

Use spotty ripe bananas for best sweetness and texture. If peanut butter is cold, let it sit at room temperature or microwave briefly for easier mixing. Chia seeds are optional but help thicken the oats. Oats keep in the fridge for up to 4 days; do not freeze. For a warm version, microwave for 45-60 seconds and stir well before serving.
