  • 3/4 cup chopped walnuts (90g), toasted

Instructions

  1. Brown the Butter: Place 6 tablespoons (85g) of unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts, then foams and begins to turn golden brown with nutty aroma (about 5-7 minutes). Remove from heat and let cool for 5 minutes.
  2. Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line with parchment paper for easy removal.
  3. Mash Bananas: In a large mixing bowl, mash 3 ripe bananas until mostly smooth but with some small chunks for texture.
  4. Mix Wet Ingredients: Add the browned butter to the bananas along with 3/4 cup (150g) granulated sugar, 1/4 cup (50g) light brown sugar, 2 large eggs (room temperature), and 1 teaspoon vanilla extract. Stir gently until combined.
  5. Combine Dry Ingredients: In a separate small bowl, whisk together 1 3/4 cups (220g) sifted all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  6. Fold Dry into Wet: Gradually add dry ingredients to the wet banana mixture, folding gently with a spatula just until no streaks of flour remain. Avoid overmixing to keep the bread tender.
  7. Add Walnuts: Fold in 3/4 cup (90g) toasted chopped walnuts evenly through the batter.
  8. Transfer & Bake: Pour batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Check around 50 minutes to avoid overbaking.
  9. Cool & Serve: Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
