One Bowl Perfect Chocolate Chip Pumpkin Muffins

These one-bowl chocolate chip pumpkin muffins are incredibly moist, tender, and packed with chocolate in every bite. With a perfect domed top and warm fall spices, they’re an easy, crowd-pleasing treat that tastes like autumn in a sweater.

  • 1 ¾ cups (210g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 1 cup (240g) pumpkin puree (100% pure, not pie filling)
  • ½ cup (120ml) vegetable oil (or canola, neutral oil)
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
  2. In a large mixing bowl, combine the pumpkin puree, vegetable oil, eggs, and vanilla extract. Whisk until smooth and uniform.
  3. Add both granulated and brown sugars to the wet ingredients. Whisk until mostly dissolved.
  4. Sprinkle the flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon over the wet mixture. Stir gently with a spatula or wooden spoon until just combined (a few streaks of flour should remain).
  5. Fold in the chocolate chips using a gentle folding motion until evenly distributed. Batter will be thick.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Don’t overmix the batter to avoid tough muffins. Use room temperature eggs for even mixing. Let the batter rest for 5 minutes before baking for taller muffins. If muffins brown too quickly, tent with foil for the last 5 minutes. Store in an airtight container at room temperature for up to 3 days, or freeze individually wrapped for up to 3 months.
