Instructions

  1. Toast the black sesame seeds: Heat a dry skillet over medium heat. Add 1/4 cup (40 g) black sesame seeds and toast, stirring constantly, for 3-5 minutes until fragrant and slightly darker. Be careful not to burn them. Remove from heat and cool.
  2. Grind the toasted seeds: Use a spice grinder or mortar and pestle to grind the toasted sesame into a fine powder. For a paste-like texture, add a teaspoon of warm water and grind further until it reaches a thick, spreadable consistency.
  3. Brew your espresso or strong coffee: Prepare 1 shot (30 ml) espresso or 1/4 cup (60 ml) strong brewed coffee. Set aside.
  4. Make the black sesame latte base: In a small saucepan, warm 1 cup (240 ml) milk over medium heat until steaming but not boiling. Stir in 1-2 tablespoons of the black sesame paste and your choice of sweetener (1-2 tsp). Whisk continuously until the paste fully dissolves and the milk is smooth and creamy, about 2-3 minutes.
  5. Froth the milk: Use a milk frother or steam wand to create a creamy foam. Aim for velvety microfoam with a glossy finish. If frothing by hand, shake warm milk vigorously in a jar or whisk rapidly.
  6. Assemble the latte: Pour the brewed espresso into your favorite mug. Slowly add the black sesame milk mixture, holding back the foam with a spoon. Then, spoon the foam on top to create a thick, frothy layer.
  7. Create the spooky spider web foam art: Drizzle a few thin lines of chocolate syrup or black sesame syrup in concentric circles over the foam. Using a toothpick or skewer, drag lines from the center outward and then from the edges inward to form a spider web pattern.
