This maple roasted delicata squash with pecans is a simple yet impressive side dish that comes together in under 30 minutes. The squash is caramelized to perfection with a sweet maple glaze and crunchy pecans, making it a perfect addition to any fall meal.

  • 2 medium delicata squash
  • ¼ cup pure maple syrup
  • ½ cup pecans, roughly chopped
  • 2 tablespoons olive oil
  • ½ teaspoon cinnamon
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  • Fresh thyme or rosemary for garnish (optional)
  • Flaky sea salt for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash the delicata squash well. Cut off the stem and the very bottom. Slice the squash in half lengthwise. Use a spoon to scoop out the seeds and stringy pulp.
  3. Place the squash halves cut-side down on a cutting board. Slice them into ½-inch thick half-moons.
  4. In a small bowl, whisk together the maple syrup, olive oil, cinnamon, salt, and black pepper.
  5. Place the sliced squash on the prepared baking sheet. Pour the maple glaze over the top and toss until every piece is well coated. Spread the squash out in a single, even layer.
  6. Roast for 15 minutes. Remove the pan from the oven and flip each piece of squash over.
  7. Sprinkle the chopped pecans over the squash. Return the pan to the oven and roast for another 10-15 minutes, until the squash is tender and the pecans are fragrant.
  8. Remove from the oven and let cool on the pan for 2-3 minutes. Transfer to a serving platter. Garnish with fresh thyme or flaky sea salt if desired. Serve warm.

Notes

Don’t skip flipping the squash halfway through for even caramelization. Watch the pecans closely as they can burn quickly. For a spicier version, add a pinch of cayenne pepper to the glaze. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days and reheated in the oven or air fryer.
