A stunning spiderweb-patterned baked brie wrapped in flaky puff pastry, ready in just 30 minutes. This easy yet impressive appetizer is perfect for Halloween parties or any gathering, with warm, gooey cheese and buttery pastry that disappears fast.

Ingredients

Scale
  • 1 (8-ounce) wheel of brie cheese
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg
  • 1 tablespoon water
  • Flaky sea salt (e.g., Maldon)
  • Crackers, crostini, apple slices, or pear slices (for serving)
  • Honey or fig jam (optional, for serving)
  • Fresh rosemary or thyme (optional, for garnish)

Instructions

  1. Take brie out of fridge 15 minutes before starting to slightly soften. Thaw puff pastry according to package directions until pliable but still cold.
  2. Lightly flour work surface. Unfold puff pastry and gently roll out slightly (1-2 inches in each direction). Place brie wheel in center. If using fillings (jam/honey), spoon on top of brie now. Fold pastry up and over brie, pleating at top. Pinch seams to seal. Flip wrapped brie so seams are on bottom. Ensure no gaps in pastry.
  3. Place wrapped brie on parchment-lined baking sheet. Freeze for 10-15 minutes. Meanwhile, preheat oven to 400°F (200°C).
  4. Remove brie from freezer. Whisk egg and water together for egg wash. Brush entire pastry surface with egg wash. Using a sharp knife, gently score a spiral pattern from center outward, then connect spiral lines with curved lines to create web effect. Cut through egg wash and just barely into pastry—not all the way through to cheese.
  5. Sprinkle pinch of flaky sea salt over top. Bake for 20-25 minutes until pastry is deep golden brown and puffed. Let cool on baking sheet for 5 minutes before serving.
  6. Transfer to serving board. Arrange crackers, fruit, and toppings around. If using honey or jam, drizzle over top right before serving.

Notes

Don’t skip the chilling step—it ensures flaky layers. Score gently to avoid cheese leakage. Let rest 5 minutes after baking to prevent cheese from flooding out. Can assemble wrapped brie (without egg wash) up to 24 hours in advance. Reheat in 350°F oven for 5-7 minutes, not microwave.
