  • 1 tablespoon freshly ground black pepper
  • 45 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons olive oil
  • Optional: 1 tablespoon Dijon mustard

Instructions

  1. Remove the standing rib roast from the fridge about 2 hours before cooking to bring it to room temperature.
  2. Preheat your oven to 450°F (232°C).
  3. In a mixing bowl, combine minced garlic, chopped rosemary, thyme, kosher salt, black pepper, olive oil, and Dijon mustard if using, to form a paste.
  4. Pat the roast dry with paper towels to remove moisture.
  5. Rub the herb mixture all over the roast, pressing into every nook and cranny, especially the fat cap.
  6. Place the roast bone-side down on a roasting pan rack.
  7. Roast at 450°F (232°C) for 20 minutes to form a crust. Tent loosely with foil if browning too fast.
  8. Reduce oven temperature to 325°F (163°C) and continue roasting until internal temperature reaches 125°F (52°C) for medium-rare, about 1.5 to 2 hours depending on size. Start checking after 1 hour 15 minutes.
  9. Remove roast from oven and tent with foil. Let rest for 20-30 minutes to allow juices to redistribute.
  10. Carve by slicing between the ribs and serve with your favorite sides.
