A quick and easy fall mimosa made with apple cider, dry sparkling wine, and a cinnamon-sugar rim. Ready in 5 minutes, it’s the perfect festive drink for autumn brunches.

Ingredients

Scale
  • 1 cup (240 ml) apple cider, chilled
  • 2 cups (480 ml) dry brut sparkling wine or champagne, chilled
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 medium apple (Honeycrisp, Fuji, or Gala), thinly sliced for garnish
  • 1–2 teaspoons maple syrup per glass (optional, for sweeter taste)
  • Ice (optional)

Instructions

  1. In a small shallow dish, mix 2 tablespoons sugar with 1 teaspoon cinnamon until evenly combined.
  2. Run an apple slice around the rim of a chilled champagne flute to moisten it, then dip the rim into the cinnamon sugar, twisting gently to coat. Tap off excess. Repeat for all glasses.
  3. Slice the apple into thin rounds, about 1/8 inch thick. For a decorative touch, cut crosswise to show the star-shaped core.
  4. Fill each glass about one-third full with chilled apple cider (about 1/3 cup or 80 ml per glass).
  5. Slowly pour chilled sparkling wine over the cider, filling the glass almost to the top (about 2/3 cup or 160 ml per glass). Pour slowly to preserve bubbles.
  6. Drop an apple slice into each glass or perch it on the rim. Serve immediately.

Notes

Chill all ingredients thoroughly before assembling. Do not stir the mimosa after pouring to preserve bubbles. For a non-alcoholic version, substitute sparkling wine with sparkling apple cider or ginger ale. For a spiced version, add a cinnamon stick and star anise to the glass. For a bourbon version, add 1 ounce bourbon per glass. Prep cinnamon sugar and apple slices ahead of time for quick assembly.
