  • 1 cup broccoli florets (90 grams), steamed
  • ½ cup shredded sharp cheddar cheese (50 grams)
  • 1 tablespoon butter (14 grams)
  • 2 tablespoons milk (30 ml), whole, 2%, or dairy-free
  • Salt and freshly ground pepper, to taste
  • Optional: 1 tablespoon cream cheese or Greek yogurt (15 grams)

Instructions

  1. Steam 1 cup (90 grams) of broccoli florets until tender but still vibrant green, about 3-4 minutes. Drain well.
  2. Place 1 cup (240 ml) of cooked rice in a microwave-safe bowl or small saucepan. Warm gently for 1-2 minutes if refrigerated, stirring occasionally.
  3. Add 1 tablespoon (14 grams) of butter and 2 tablespoons (30 ml) of milk to the hot rice. Stir until butter melts and mixture is creamy.
  4. Add ½ cup (50 grams) shredded sharp cheddar cheese, stirring continuously until cheese melts smoothly into the rice.
  5. Gently fold steamed broccoli into the cheesy rice mixture. Season with salt and freshly ground pepper to taste.
  6. Optional: Stir in 1 tablespoon (15 grams) of cream cheese or Greek yogurt for extra creaminess.
  7. Transfer the mixture into a bento box or lunch container. Add sides like fresh fruit, nuts, or a boiled egg if desired.

Notes

Use day-old rice for better texture. Avoid overheating cheese to prevent graininess. Frozen broccoli works well if steamed and drained properly. For vegan version, substitute dairy ingredients with plant-based alternatives and use nutritional yeast for cheesiness.
