These quick freezer breakfast burritos are packed with protein, wrapped in a warm tortilla, and ready in ninety seconds from the microwave. Perfect for busy school mornings, they turn chaotic mornings into calm ones.

Ingredients

Scale
  • 12 large eggs
  • ¼ cup milk or half-and-half
  • 1 pound breakfast sausage or 12 strips bacon
  • 2 cups shredded cheddar, Monterey Jack, or Mexican blend cheese
  • 8–10 burrito-sized flour tortillas (10 inches)
  • 1 tablespoon butter or oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: diced bell peppers, onions, cooked potatoes, black beans, or chopped green chiles

Instructions

  1. Cook the meat: In a large skillet, cook breakfast sausage or bacon over medium heat until fully cooked and crispy. If using sausage, break it into small crumbles. If using bacon, cook until crisp, then transfer to a paper towel-lined plate to cool, then crumble or chop. Drain excess grease from the skillet, leaving a little for flavor.
  2. Cook the vegetables (optional): If adding bell peppers, onions, or potatoes, cook them in the same skillet over medium heat until softened, about 5-7 minutes. Season with a pinch of salt. Transfer to a bowl and let cool slightly.
  3. Scramble the eggs: In a large mixing bowl, whisk together 12 eggs and ¼ cup milk until uniform. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Heat the skillet over medium-low heat and add 1 tablespoon butter. Once melted and bubbling, pour in the egg mixture. Let sit for 30 seconds, then gently push cooked eggs from edges toward center with a spatula. Repeat until eggs are just set but still soft and fluffy. Remove from heat immediately.
  4. Cool the fillings: Spread scrambled eggs on a large plate or baking sheet to cool. Do the same with cooked meat and vegetables. Let everything cool to room temperature, about 15-20 minutes.
  5. Assemble the burritos: Lay a tortilla flat. Spoon about ⅓ cup scrambled eggs down the center. Top with about 2 tablespoons crumbled meat and 2 tablespoons shredded cheese. Add any vegetables if using. Do not overfill.
  6. Roll the burritos: Fold the sides of the tortilla inward over the filling. Fold the bottom edge up and over the filling, tucking tightly. Roll the burrito away from you, keeping it snug, until fully closed. Place seam-side down on a baking sheet. Repeat with remaining tortillas and filling.
  7. Flash freeze: Place the baking sheet with assembled burritos in the freezer, uncovered, for at least 2 hours.
  8. Wrap and store: Once frozen solid, wrap each burrito tightly in parchment paper or plastic wrap. Place wrapped burritos in a freezer-safe bag or container, squeeze out as much air as possible, and seal. Label with date and contents. They will stay fresh for up to 3 months.

Notes

Drain excess moisture from fillings to prevent soggy tortillas. Let burritos cool completely before freezing to avoid ice crystals. For best reheating, microwave on 50% power for 1 minute, then full power for 30-45 seconds, or use an air fryer at 350°F for 10-12 minutes. Add a pinch of baking soda to eggs to keep them tender when reheated.
