  • 1 cup fresh berries (mixed strawberries, blueberries, raspberries, or any seasonal fruit)
  • 2 tablespoons honey
  • 1 ½ cups old-fashioned rolled oats
  • ½ cup raw almonds, roughly chopped
  • ½ cup raw walnuts, chopped
  • 2 tablespoons flaxseeds (optional)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons maple syrup or honey
  • 2 tablespoons unsalted butter or coconut oil, melted
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 325°F (160°C). Line your baking sheet with parchment paper for easy cleanup and even toasting.
  2. In a large bowl, combine 1 ½ cups rolled oats, ½ cup chopped almonds, ½ cup chopped walnuts, 2 tablespoons flaxseeds, 1 teaspoon ground cinnamon, and a pinch of sea salt. Stir well to evenly distribute the cinnamon and salt.
  3. In a small bowl, whisk together 3 tablespoons maple syrup (or honey), 2 tablespoons melted butter or coconut oil, and 1 teaspoon vanilla extract until smooth.
  4. Pour the wet mixture over the dry ingredients and stir with a spatula until all oats and nuts are coated.
  5. Spread the granola mixture onto the lined baking sheet in an even layer about ¼ inch thick.
  6. Bake for 20-25 minutes, stirring halfway through (around 12 minutes) to toast evenly. Watch closely near the end to avoid burning.
  7. Remove from oven and let the granola cool completely on the baking sheet to crisp up.
  8. To assemble the parfait, layer ½ cup Greek yogurt in serving glasses or bowls, drizzle a little honey over it, add a generous layer of homemade granola, then top with fresh berries. Repeat layers if desired.
  9. Serve immediately or chill in the fridge for 10-15 minutes before serving. Note that granola may soften if left too long.

Notes

Do not skip the cooling step for granola to ensure crispiness. Use a light hand with sweeteners to avoid soggy granola. Stir granola halfway through baking gently to preserve clusters. Store granola in an airtight container for up to two weeks. Assemble parfait just before serving to keep granola crunchy. For dairy-free, use coconut yogurt and swap honey for maple syrup.
