Quick Juicy Garlic Butter Chicken Breast Skillet Recipe for Easy Dinner

A quick and easy skillet recipe featuring juicy chicken breasts cooked in a rich garlic butter sauce, perfect for weeknight dinners.

  • 2 boneless, skinless chicken breasts (about 68 oz / 170225 g each), pounded to even thickness
  • 3 tablespoons unsalted butter (about 42 g), divided
  • 4 cloves garlic, finely minced or pressed
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon chopped fresh parsley or thyme (optional)
  • 1 tablespoon freshly squeezed lemon juice (optional)

Instructions

  1. Place chicken breasts between two pieces of plastic wrap or parchment paper. Pound gently with a meat mallet or rolling pin until about ¾ inch (2 cm) thick and even.
  2. Pat the chicken dry with paper towels. Season both sides with salt and freshly ground black pepper.
  3. Over medium heat, warm 1 tablespoon olive oil in your skillet until shimmering but not smoking.
  4. Place chicken breasts in the hot skillet carefully. Let them cook undisturbed for 5-6 minutes until golden brown on the bottom and releasing easily from the pan. Flip and cook the other side for 4-5 minutes.
  5. Reduce heat to medium-low. Add 2 tablespoons of butter and minced garlic to the pan. Spoon the melting butter and garlic over the chicken repeatedly for 2-3 minutes.
  6. Stir in chopped fresh herbs and drizzle with lemon juice right before removing the chicken from the skillet.
  7. Transfer chicken to a plate and let rest for 5 minutes to allow juices to redistribute.

Notes

If chicken breasts are thick, cover skillet loosely with a lid after adding butter and garlic to finish cooking without drying out. Use a meat thermometer to check for an internal temperature of 165°F (74°C). Rest chicken for 5 minutes before serving to keep it juicy. For dairy-free, substitute butter with vegan butter or olive oil.
