A quick and easy skillet-seared turkey breast with a sticky maple bourbon glaze, perfect for a cozy dinner for two. Ready in under 45 minutes with one-pan cleanup.

Ingredients

Scale
  • 1 boneless, skin-on turkey breast half (about 1 to 1.25 pounds / 450–560 grams)
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 cup pure maple syrup
  • 2 tablespoons bourbon (e.g., Maker’s Mark or Bulleit)
  • 1 tablespoon unsalted butter
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon apple cider vinegar
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place your cast iron skillet in the oven while it preheats.
  2. Pat the turkey breast dry with paper towels. Season both sides with salt, pepper, garlic powder, and dried thyme.
  3. In a small saucepan over medium heat, combine maple syrup, bourbon, butter, Dijon mustard, apple cider vinegar, and cayenne (if using). Whisk until butter melts and mixture thickens slightly, about 3-4 minutes. Remove from heat and set aside.
  4. Carefully remove the hot skillet from the oven using oven mitts. Place on stovetop over medium-high heat. Add olive oil and swirl to coat.
  5. Sear the turkey breast skin-side down for 3-4 minutes until deep golden brown. Flip and sear the other side for 2 minutes.
  6. Brush the glaze generously over the turkey. Reserve about half the glaze for later.
  7. Transfer the skillet to the oven and roast for 15 minutes. Remove, brush with another layer of glaze, and roast for another 10-15 minutes.
  8. Check the internal temperature at the thickest part; it should reach 160°F (71°C). It will carry over to 165°F while resting.
  9. Let the turkey rest on a cutting board for 10 minutes, loosely covered with foil. Pour pan juices into remaining glaze and stir.
  10. Slice against the grain into thick slices. Drizzle with extra glaze and serve.

Notes

For best results, use a meat thermometer and pull the turkey at 160°F to avoid overcooking. Let the turkey rest for 10 minutes before slicing. The glaze can be made ahead and refrigerated for up to a week.
