Ingredients

Scale
  • 12 large eggs
  • Ice water bath (for shocking eggs)
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (plus more for garnish)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1–2 teaspoons pickle juice (optional)
  • 2 tablespoons sour cream (for web drizzle)
  • 1 can (6 oz) large pitted black olives
  • 1/2 cup chow mein noodles

Instructions

  1. Hard-boil the eggs: Place eggs in a single layer in a large pot, cover with cold water by 1 inch. Bring to a rolling boil over high heat, cover, turn off heat, and let sit for exactly 12 minutes. Meanwhile, prepare a large bowl of ice water.
  2. Shock and peel: Transfer eggs to ice water bath with a slotted spoon. Let sit at least 5 minutes. Tap eggs to crack shells, peel under cool running water, and pat dry.
  3. Prepare egg whites: Slice each egg in half lengthwise. Pop out yolks into a medium bowl. Place egg white halves on a serving platter, cut-side up.
  4. Make filling: Add mayonnaise, 1/4 cup sour cream, yellow mustard, garlic powder, smoked paprika, salt, pepper, and pickle juice (if using) to the yolks. Mash with a fork until smooth and creamy. Adjust seasoning to taste.
  5. Pipe filling: Spoon filling into a piping bag or zip-top bag. Snip off a small corner. Pipe a generous swirl into each egg white half.
  6. Make spider web topping: In a small bowl, stir 2 tablespoons sour cream with 1 teaspoon milk or water until drizzly. Spoon a tiny dollop (about 1/4 teaspoon) onto the center of each filled egg. Using a toothpick, gently drag sour cream outward from center to edge in 4-6 directions to create a web pattern.
  7. Assemble spiders: Slice black olives into thin rounds. For each spider, press 8 chow mein noodle pieces (4 on each side) into the filling around the olive body. Place an olive round on top of the legs. Optionally add tiny sour cream dots for eyes.
  8. Garnish and serve: Lightly sprinkle with smoked paprika. Serve immediately or refrigerate for up to 2 hours. For crispiest legs, add noodles just before serving.

Notes

Use older eggs (a week or two old) for easier peeling. For the crispiest spider legs, add chow mein noodles just before serving. The filled eggs (without spiders) can be refrigerated up to 24 hours ahead. Do not leave at room temperature for more than 2 hours.
