Refreshing Blackberry Lavender Popsicles

These blackberry lavender popsicles are a quick, easy, and refreshing homemade summer treat combining juicy blackberries with a subtle floral lavender note, perfect for cooling down on hot days.

  • 2 cups (300g) fresh blackberries
  • 1 tablespoon fresh culinary-grade lavender flowers
  • 23 tablespoons honey (or maple syrup/agave for vegan option)
  • 2 tablespoons fresh lemon juice
  • 1 cup (240ml) water
  • Pinch of sea salt (optional)

Instructions

  1. Make the lavender infusion: In a small saucepan, bring 1 cup (240ml) of water to a gentle boil. Remove from heat, add 1 tablespoon of fresh lavender flowers, and cover. Let steep for 10 minutes. Strain out the flowers and allow the liquid to cool completely.
  2. Prepare the blackberry puree: Rinse 2 cups (300g) of fresh blackberries under cold water. Puree in a blender or food processor until smooth. For seedless popsicles, strain the puree through a fine mesh sieve.
  3. Combine ingredients: In a mixing bowl, stir the cooled lavender infusion with the blackberry puree. Add 2-3 tablespoons honey, 2 tablespoons fresh lemon juice, and a pinch of sea salt if using. Mix well and adjust sweetness or tartness to taste.
  4. Fill the molds: Pour the mixture evenly into popsicle molds, leaving space at the top. Insert sticks and place molds on a tray for stability.
  5. Freeze: Freeze for at least 4-6 hours or overnight until completely solid.
  6. Release and enjoy: Run warm water over the outside of the molds for a few seconds to loosen popsicles. Gently pull on sticks and serve.

Notes

Do not steep lavender longer than 10 minutes to avoid bitterness. Adjust honey and lemon juice to balance sweetness and tartness. Strain puree for smoother texture or leave seeds for rustic texture. Freeze molds on a flat surface for even popsicles. Smaller molds or silicone ice cube trays can speed freezing time.
