Refreshing Blueberry Lemonade Popsicles

These homemade blueberry lemonade popsicles are a quick, easy, and refreshing summer treat that balances tart lemon with sweet blueberries for a perfect cool-down snack.

Ingredients

  • 1 ½ cups fresh blueberries (about 225g)
  • ½ cup fresh lemon juice (about 23 medium lemons or 120ml)
  • ½ cup granulated sugar (100g)
  • 1 ½ cups water (360ml)
  • Optional: a few sprigs fresh mint leaves

Instructions

  1. Place 1 cup (150g) of fresh blueberries into a blender and blend until smooth but still slightly textured, about 20 seconds.
  2. In a mixing bowl, combine fresh lemon juice, granulated sugar, and water. Stir well until the sugar dissolves completely, about 2-3 minutes. If needed, warm the water slightly before mixing and then cool.
  3. Pour the blueberry puree into the lemonade base and gently stir to combine. Reserve about ½ cup (75g) of whole blueberries to add into the mixture.
  4. If using fresh mint, chop a few leaves finely and stir them into the mixture.
  5. Pour the mixture evenly into popsicle molds, leaving a little space at the top for expansion. Add the reserved whole blueberries into each mold.
  6. Insert sticks and freeze for at least 4-6 hours, ideally overnight, on a flat surface.
  7. To unmold, run warm water over the mold’s exterior for 10-20 seconds and gently pull out the popsicles. Serve immediately.

Notes

Use organic blueberries if possible for best flavor. Adjust sugar to taste to balance tartness. Freeze on a flat surface for even popsicles. Run warm water over molds to easily unmold. Stir mixture occasionally during first hour of freezing to reduce ice crystals.
