Ingredients

Scale
  • 1 cup (227 g) unsalted butter, melted
  • 1 1/4 cups (250 g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 medium apples (about 2 cups / 300 g), peeled and diced (recommended Granny Smith or Honeycrisp)
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp granulated sugar
  • 3/4 cup (75 g) old-fashioned rolled oats
  • 1/2 cup (65 g) all-purpose flour
  • 1/3 cup (70 g) light brown sugar, packed
  • 6 tbsp (85 g) unsalted butter, cold and cubed
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 1/3 cup (80 ml) salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper.
  2. In a small bowl, toss the diced apples with cinnamon, nutmeg, and granulated sugar. Set aside to marinate.
  3. In a large bowl, whisk together melted butter and brown sugar until combined and glossy. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold dry ingredients into wet ingredients until just combined.
  5. Gently fold the spiced apple mixture into the batter.
  6. Pour batter evenly into the prepared pan.
  7. In a medium bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add cold cubed butter and cut it in with a pastry cutter or fingertips until mixture resembles coarse crumbs.
  8. Sprinkle the oat crumble evenly over the blondie batter without pressing down.
  9. Bake for 35–40 minutes until edges are golden and a toothpick inserted comes out with moist crumbs.
  10. Cool completely on a wire rack.
  11. Warm salted caramel sauce slightly if needed and drizzle over cooled bars before serving.

Notes

Use room temperature eggs for better batter texture. Do not overmix batter to avoid dense bars. Keep butter cold for crumble topping to maintain crumbly texture. Start checking bars at 35 minutes to avoid overbaking. Let bars cool completely before cutting to prevent crumbling. For dairy-free, substitute butter with coconut oil and use dairy-free caramel sauce. For gluten-free, replace all-purpose flour with gluten-free baking blend and use certified gluten-free oats.
