  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon smoked paprika
  • Salt to taste (kosher salt recommended)
  • Black pepper to taste, freshly ground
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes before use)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels to remove excess moisture.
  2. In a small saucepan over low heat, melt the butter. Stir in minced garlic, smoked paprika, salt, and pepper. Simmer gently for 2-3 minutes without browning the garlic. Remove from heat and stir in lemon juice and chopped parsley.
  3. Place shrimp in a mixing bowl and pour half of the garlic butter mixture over them. Toss gently to coat evenly. Reserve the rest of the butter for basting. Let shrimp marinate for 10-15 minutes at room temperature.
  4. Thread 5-6 shrimp per skewer, piercing through the thickest part and leaving space between each shrimp.
  5. Preheat grill to medium-high heat (about 375°F). Lightly oil the grates to prevent sticking.
  6. Grill shrimp skewers for 2-3 minutes per side, flipping once. Brush frequently with reserved garlic butter while grilling. Shrimp are done when pink, opaque, and have slight char marks. Avoid overcooking.
  7. Serve immediately, drizzling any leftover butter over the skewers and garnishing with extra parsley or lemon wedges if desired.

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Keep garlic butter warm while basting to maintain texture. Avoid overcooking shrimp to prevent rubbery texture. Can substitute ghee or plant-based butter for dairy-free option. Add red pepper flakes for a spicy kick.
