Savory Loaded Pulled Pork Nachos Recipe with Easy Green Chile Queso

Tender pulled pork layered over crispy tortilla chips with a spicy green chile queso, topped with fresh jalapeños, cilantro, and avocado for a crowd-pleasing snack or meal.

  • 3 cups (about 10 oz or 450g) slow-cooked shredded pork shoulder
  • 1 large bag (1012 oz or 280–340g) thick, sturdy tortilla chips
  • 8 oz (225g) white American cheese or processed cheese
  • 1 cup (240ml) whole milk or half-and-half
  • 23 canned green chiles, chopped
  • 1 small jalapeño, finely diced (seeds removed for less heat)
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 cup (150g) black beans, rinsed and drained (optional)
  • 1/2 cup (75g) diced red onion
  • 1/2 cup (60g) fresh cilantro, chopped
  • Pickled jalapeños, sliced
  • 1/2 cup (120g) sour cream or crema
  • 1 ripe avocado, diced or sliced (optional)
  • Fresh lime wedges for squeezing

Instructions

  1. Preheat oven to 375°F (190°C). Lightly spray or line a baking sheet with parchment paper.
  2. In a medium saucepan, combine milk and chopped green chiles over medium-low heat. Warm gently until steaming but not boiling, about 5 minutes.
  3. Gradually stir in chopped white American cheese a handful at a time, whisking slowly until melted and smooth. Add minced garlic, diced jalapeño, cumin, salt, and pepper. Cook 2–3 minutes until thickened but pourable. Add more milk if too thick.
  4. Prepare toppings: dice red onion, chop cilantro, slice pickled jalapeños, cube avocado, and rinse black beans if using.
  5. Spread half the tortilla chips on the baking sheet. Evenly distribute half the pulled pork and black beans. Drizzle with half the green chile queso. Repeat layering with remaining chips, pork, beans, and queso.
  6. Bake for 10–12 minutes until queso is bubbly and pork is warmed through but chips remain crisp.
  7. Remove from oven and top with diced onions, cilantro, pickled jalapeños, avocado, and dollops of sour cream. Squeeze fresh lime wedges over the top.
  8. Serve immediately while hot and fresh.
