Savory One-Pan Garlic Butter Steak Bites with Asparagus

A quick and easy one-pan dinner featuring juicy garlic butter steak bites and tender asparagus, perfect for busy weeknights and minimal cleanup.

  • 1 pound sirloin or ribeye steak, cut into 1-inch cubes
  • 1 bunch asparagus (about 1 pound), trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley or thyme (optional)
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Trim the tough ends off the asparagus and cut into roughly 2-inch pieces. Cube the steak into 1-inch chunks. Mince the garlic finely.
  2. Season the steak cubes generously with salt and pepper.
  3. Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Heat until shimmering but not smoking, about 2 minutes.
  4. Add steak cubes in a single layer (in batches if needed). Cook undisturbed for 2-3 minutes until a golden crust forms, then flip and cook another 2-3 minutes for medium-rare to medium. Remove steak and set aside.
  5. In the same pan, add 1 tablespoon butter and minced garlic. Stir quickly to avoid burning the garlic, then add asparagus pieces. Sauté, stirring occasionally, until asparagus is bright green and tender-crisp, about 4-5 minutes.
  6. Return steak bites to the pan, add remaining 2 tablespoons butter, and toss gently to coat everything evenly. Add fresh herbs and red pepper flakes if using. Adjust salt and pepper to taste.
  7. Serve immediately while warm.

Notes

Do not overcrowd the pan when searing steak bites to ensure a good crust. Pat steak dry before seasoning. Add garlic just before asparagus to prevent burning. Let steak rest briefly after searing. For dairy-free, substitute butter with ghee or plant-based butter.
