  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • ¾ cup mayonnaise (preferably Hellmann’s)
  • 2 chipotle peppers in adobo sauce, finely chopped (adjust for heat preference)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • 1 small garlic clove, minced
  • 12 small slider buns (King’s Hawaiian recommended)
  • Pickled red onions (optional)
  • Fresh cilantro leaves (a handful for garnish)
  • Cheddar cheese slices (optional)

Instructions

  1. Prepare the brisket: If using leftover brisket, shred finely with two forks. If cooking fresh, season brisket with smoked paprika, garlic powder, onion powder, salt, and pepper. Cook low and slow in a slow cooker for 6-8 hours on low or in a 275°F oven wrapped in foil for 4-5 hours until tender.
  2. Make the chipotle mayo: In a bowl, whisk together mayonnaise, chopped chipotle peppers, lime juice, honey, and minced garlic until smooth. Refrigerate for at least 15 minutes to meld flavors.
  3. Toast the slider buns: Slice buns in half and toast cut side down in a skillet over medium heat for 1-2 minutes until golden and slightly crisp.
  4. Assemble the sliders: Spread chipotle mayo on the bottom half of each bun. Add a generous portion of shredded brisket, pickled red onions, cilantro leaves, and cheddar cheese if desired. Top with the bun tops.
  5. Serve warm immediately. For melty cheese, place assembled sliders under a broiler for 1-2 minutes before serving.

Notes

If brisket is dry, stir extra chipotle mayo into the meat for moisture. Toast buns just before serving to prevent sogginess. Adjust chipotle pepper quantity to control heat. Leftover sliders can be refrigerated up to 3 days and reheated covered at 325°F for 10-15 minutes.
