  • About 30 whole almonds (one per cookie)

Instructions

  1. Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3 minutes. If using food coloring, add it now and beat until evenly distributed.
  2. Add the wet ingredients: Beat in the egg, vanilla extract, and almond extract until combined.
  3. Combine the dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Do not overmix.
  4. Chill the dough: Wrap the dough in plastic wrap and flatten it into a disc. Refrigerate for at least 30 minutes, or up to 2 hours.
  5. Prepare the almond nails: While the dough chills, paint a thin layer of apricot jam onto the rounded tip of each almond. Place them on a plate, jam-side up, and let them dry slightly.
  6. Shape the fingers: Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper. Pinch off a piece of dough about the size of a walnut (roughly 1 ½ tablespoons). Roll it into a log shape, about 3 to 4 inches long, slightly thicker at one end and tapered at the other. Place on prepared baking sheet, spacing about 2 inches apart.
  7. Add the knuckle details: Using the back of a butter knife or small offset spatula, gently press two or three horizontal lines into each finger to create knuckles. Don’t press too deep.
  8. Attach the nails: Take a prepared almond and press it gently into the tapered end of each finger, jam-side down. The almond should sit flush against the dough.
  9. Bake: Bake for 12 to 15 minutes, or until the edges are just barely golden. The centers should still look slightly soft.
  10. Cool and set: Let the cookies cool on the baking sheet for 5 minutes. Transfer to a cooling rack and let cool completely.
  11. The final touch (optional): For extra creepiness, add a small dab of red jam or gel at the base of each nail.

Keep the dough cold throughout the process to prevent spreading. Use a gentle rolling motion when pressing knuckle lines to create realistic bulges. Press the almond at a slight upward angle for a natural look. Apricot jam works best for the nails—it’s thick and dark. Let cookies rest on the baking sheet for 5 minutes after baking to set the nails.
