These no-bake energy bites combine creamy peanut butter, sweet honey, and hearty oats for a quick and satisfying snack. Perfect for spring picnics, hikes, or a grab-and-go treat.

Ingredients

Scale
  • 1 cup rolled oats (not quick oats)
  • 1/2 cup creamy peanut butter (well-stirred if natural)
  • 1/3 cup honey
  • 1/2 teaspoon vanilla extract (pure vanilla recommended)
  • 1/4 teaspoon salt
  • 1/4 cup ground flaxseed
  • 1/4 cup mini chocolate chips (optional)
  • 2 tablespoons unsweetened shredded coconut (optional)

Instructions

  1. Line a baking sheet or large plate with parchment paper.
  2. In a large mixing bowl, combine 1 cup rolled oats, 1/4 cup ground flaxseed, 1/4 cup mini chocolate chips (if using), and 2 tablespoons shredded coconut. Stir to distribute evenly.
  3. Add 1/2 cup creamy peanut butter, 1/3 cup honey, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt to the bowl.
  4. Mix thoroughly with a rubber spatula or wooden spoon until a cohesive, slightly sticky dough forms. If too dry, add a teaspoon more honey; if too wet, add a tablespoon more oats.
  5. Let the mixture rest for 5 minutes to allow oats to absorb moisture.
  6. Using a small cookie scoop or tablespoon, portion the dough into about 18-20 equal portions (about 1 tablespoon each).
  7. Roll each portion between your palms into a smooth ball. If sticky, dampen hands slightly with water.
  8. Place the rolled bites on the prepared baking sheet.
  9. Refrigerate for at least 30 minutes to firm up before serving. Enjoy chilled or at room temperature.

Notes

For best texture, use old-fashioned rolled oats. If using natural peanut butter, stir well before measuring to avoid greasy bites. Let the mixture rest for 5 minutes before rolling for easier handling. Energy bites can be stored in an airtight container in the refrigerator for up to 2 weeks or frozen for up to 3 months.
