  • 2 cups boiling water
  • 2 cups cold water
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine crushed pretzels and granulated sugar. Pour in melted butter and stir until mixture resembles wet sand.
  2. Press pretzel mixture firmly into the bottom of a 9×13 inch baking dish. Bake for 10 minutes until golden and fragrant. Let cool slightly.
  3. In a large bowl, beat softened cream cheese until smooth (2-3 minutes). Gradually add powdered sugar and vanilla extract, mixing until combined.
  4. In a separate chilled bowl, whip cold heavy cream to stiff peaks (4-5 minutes). Gently fold whipped cream into cream cheese mixture until fluffy.
  5. Spread creamy mixture evenly over cooled pretzel crust. Refrigerate while preparing strawberry topping.
  6. Dissolve strawberry gelatin in boiling water, stirring until dissolved. Add cold water and stir. Let cool to room temperature but not set.
  7. Arrange sliced strawberries evenly over cream layer. Carefully pour cooled gelatin mixture over strawberries.
  8. Return dish to refrigerator and chill at least 4 hours or until fully set.
  9. Cut into bars with a sharp knife, wiping knife clean between cuts. Serve chilled.

Notes

Press the pretzel crust firmly and evenly to prevent crumbling. Chill mixing bowls and beaters for faster whipping. Pour gelatin topping at room temperature to avoid melting the cream layer. For cleaner cuts, dip knife in hot water and wipe dry before slicing. Bars improve in flavor after chilling overnight.
