  • ½ cup (115 g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Optional add-ins: ½ cup chopped walnuts or pecans, ½ cup chocolate chips, or ¼ cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the bananas in a large mixing bowl with a fork until mostly smooth but with a few small chunks.
  3. Add melted butter to the mashed bananas and stir to combine.
  4. Mix in granulated sugar, brown sugar, and vanilla extract until sugars are mostly dissolved.
  5. Beat in the eggs one at a time, stirring well after each addition.
  6. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  7. Gently fold the dry ingredients into the wet mixture using a spatula or wooden spoon until just combined.
  8. If using optional add-ins, fold them in last, evenly distributing without breaking up the batter.
  9. Pour the batter into the prepared loaf pan and smooth the top gently.
  10. Bake for 55-65 minutes, checking at 55 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  11. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
