  • 4 bone-in pork chops, about 1 inch thick (boneless can be used)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup honey
  • 2 tablespoons soy sauce (low sodium recommended)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard (optional)
  • 1/4 cup water
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
  2. Heat a heavy-bottomed skillet or cast iron pan over medium-high heat. Add 2 tablespoons olive oil and heat until shimmering but not smoking, about 2 minutes.
  3. Add pork chops to the pan without crowding. Sear for 4-5 minutes on the first side until golden brown, then flip and sear the other side for 4 minutes. Pork should reach an internal temperature of 145°F (63°C).
  4. Transfer pork chops to a plate and tent loosely with foil to rest for 5 minutes.
  5. Lower heat to medium. In the same pan, add minced garlic and sauté gently for about 30 seconds until fragrant but not browned.
  6. Add honey, soy sauce, apple cider vinegar, Dijon mustard, and water. Stir to combine.
  7. Simmer the glaze gently for 3-4 minutes, stirring occasionally, until thick and sticky with a glossy shine.
  8. Return pork chops to the pan and spoon glaze over them. Cook for 1-2 minutes to warm through and let the sauce cling.
  9. Sprinkle chopped fresh parsley over the top and serve immediately.

Notes

If glaze gets too thick or hardens, add a splash of water to loosen it. Rest pork chops after searing to keep them juicy. Use medium-high heat for searing to avoid rubbery meat or burnt glaze. Garlic should be sautéed gently to avoid bitterness. Cast iron pan recommended for best sear.
