  • 1/4 cup (85 grams) honey
  • 1/3 cup (80 ml) bourbon
  • 1/2 cup (120 ml) BBQ sauce
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 12 small slider buns
  • Optional toppings: pickles, coleslaw, sliced red onions

Instructions

  1. Rinse and pat dry about 2 pounds (900 grams) of chicken thighs or breasts. Trim excess fat if desired.
  2. In a bowl, combine 1/4 cup (85 grams) honey, 1/3 cup (80 ml) bourbon, 1/2 cup (120 ml) BBQ sauce, 2 tablespoons (30 ml) apple cider vinegar, 1 teaspoon each garlic powder, onion powder, and smoked paprika, plus salt and pepper to taste. Whisk until smooth.
  3. Place the chicken in the slow cooker, then pour the sauce over it, turning the chicken to coat evenly.
  4. Set the slow cooker to low and cook for 6 to 7 hours.
  5. When done, shred the chicken directly in the slow cooker using two forks or tongs.
  6. If the sauce is too thin, remove the shredded chicken and simmer the sauce on the stove for 5 minutes to thicken, then return the chicken to coat it evenly. If too thick, add a splash of water or more bourbon.
  7. Spoon the pulled chicken onto soft slider buns and add optional toppings like pickles or coleslaw. Serve warm.

Notes

Use chicken thighs for juicier results; breasts can dry out if overcooked. Toast buns lightly to prevent sogginess. Adjust honey and bourbon levels to taste. For heat, add cayenne or hot sauce to the sauce before cooking. Sauce can be prepared up to 2 days in advance and refrigerated.
