Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup (120ml) buttermilk, room temperature
  • ⅓ cup (60g) rainbow sprinkles (jimmies)
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar
  • 2 teaspoons vanilla extract (for frosting)
  • 2–3 tablespoons milk or heavy cream
  • ¼ teaspoon salt (for frosting)
  • Additional sprinkles for decorating

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with 12 paper liners.
  2. Whisk the dry ingredients together: flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
  3. Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together on medium speed for 3-4 minutes until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Add the vanilla extract.
  5. Alternate adding dry ingredients and buttermilk: With mixer on low, add one-third of the flour mixture, mix until just combined, then half the buttermilk. Repeat with another third of flour, remaining buttermilk, and finish with the last of the flour. Do not overmix.
  6. Fold in the sprinkles gently with a rubber spatula until evenly distributed.
  7. Fill the liners about two-thirds full using a cookie scoop or spoon.
  8. Bake for 18-22 minutes, rotating the pan halfway through. Cupcakes are done when a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely (at least 30 minutes).
  10. Make the frosting: Beat softened butter on medium speed for 2 minutes until creamy. Gradually add powdered sugar, then vanilla, salt, and 2 tablespoons milk. Beat on medium-high for 3-4 minutes until light and fluffy. Add more milk if needed.
  11. Frost cooled cupcakes with a piping bag and star tip. Top with sprinkles.

Notes

Use jimmies (not nonpareils) to prevent color bleeding. Room temperature ingredients are crucial for best texture. Do not overmix the batter. For extra crunch, toast sprinkles at 300°F for 3-4 minutes before decorating. Cupcakes taste even better the next day.
