These Holiday Cranberry Brie Bites with Puff Pastry are quick, easy, and perfect for holiday parties. Made with frozen puff pastry, brie, cranberry sauce, and fresh rosemary, they come together in under 30 minutes and always disappear fast.

Ingredients

Scale
  • 1 package (17.3 ounces) frozen puff pastry sheets (2 sheets)
  • 8 ounces brie cheese, cut into small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 large egg
  • 1 tablespoon water
  • 2 tablespoons fresh rosemary, finely chopped
  • 1/4 teaspoon flaky sea salt
  • Optional: 2 tablespoons honey
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 400°F (200°C). Make sure the rack is in the middle position.
  2. Thaw the puff pastry according to package directions (usually 30-40 minutes at room temperature). The pastry should be cold but pliable.
  3. Lightly flour your work surface and unfold one sheet of puff pastry. Using a rolling pin, gently roll it out just enough to smooth the seams (2-3 passes).
  4. Cut the pastry sheet into 12 equal squares (cut into thirds lengthwise, then quarters crosswise). Each square should be about 2.5 to 3 inches wide.
  5. Press each square into a cup of a mini muffin tin, gently pressing down to line the bottom and sides, leaving the corners sticking up slightly. Repeat with the second sheet to make 24 total cups.
  6. Cut the brie into small cubes about 1/2 inch in size. Remove rind if desired.
  7. Place 1-2 cubes of brie into each pastry cup, filling about halfway.
  8. Top each cup with about 1/2 teaspoon of cranberry sauce.
  9. In a small bowl, whisk together the egg and 1 tablespoon of water to make the egg wash.
  10. Brush the edges of each pastry cup with the egg wash, avoiding the muffin tin.
  11. Sprinkle each cup with a pinch of chopped rosemary and a tiny bit of flaky sea salt.
  12. Bake for 12-15 minutes, or until the pastry is golden brown and puffed and the brie is melted and bubbly.
  13. Let the bites cool in the pan for 5 minutes.
  14. Transfer to a serving platter and serve warm. Optionally drizzle with honey or sprinkle with chopped nuts before serving.

Notes

Keep the pastry cold to ensure flaky layers. Don’t overfill the cups with brie. Let cool for 5 minutes before removing from the tin. Can be assembled up to 4 hours ahead (without egg wash and rosemary) and refrigerated. For freezing, freeze unbaked assembled bites for up to 1 month; bake from frozen, adding 3-5 minutes.
