This seven-layer dip is the ultimate game day crowd-pleaser, coming together in under 25 minutes with simple pantry ingredients. It features seasoned refried beans, creamy sour cream and guacamole, fresh salsa, cheese, and crunchy toppings for a perfect party appetizer.

Ingredients

Scale
  • 16 oz can refried beans (preferably Rosarita)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder (optional)
  • 1 cup sour cream (full-fat recommended)
  • 1 1/2 cups guacamole (store-bought or homemade)
  • 1 cup salsa (medium-thick, drained)
  • 1 1/2 cups shredded lettuce (iceberg or romaine)
  • 1 cup diced tomatoes (seeds and juice removed)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup sliced black olives (drained)
  • Fresh jalapeño slices (optional, for heat)
  • 1/4 cup sliced green onions
  • Large bag sturdy tortilla chips (e.g., Tostitos Scoops)

Instructions

  1. Prep your ingredients first: dice tomatoes, slice green onions, shred cheese, and drain olives. Pat everything dry with paper towels.
  2. In a small bowl, mix refried beans with cumin, chili powder, and garlic powder until combined.
  3. Spread seasoned beans evenly across the bottom of a 9×13-inch dish to form a 1/2-inch thick layer.
  4. Drop spoonfuls of sour cream over the bean layer and gently spread to the edges. Let sit for 30 seconds.
  5. Carefully spoon guacamole over the sour cream and spread gently, leaving small peaks for texture.
  6. Spoon drained salsa evenly over the guacamole.
  7. Sprinkle shredded cheddar cheese evenly over the salsa, covering every inch.
  8. Scatter shredded lettuce over the cheese, then top with diced tomatoes.
  9. Finish with black olives, jalapeño slices (if using), and green onions.
  10. Cover with plastic wrap and refrigerate for at least 30 minutes before serving. Serve with tortilla chips.

Notes

Layer order matters: beans first (heaviest), then sour cream (barrier), then guacamole, salsa, cheese, lettuce, tomatoes, and toppings. Drain all wet ingredients to prevent sogginess. Use room temperature sour cream and guacamole for easier spreading. Make ahead up to 24 hours, but add lettuce and tomatoes just before serving. For best results, chill at least 30 minutes before serving.
